These delicious breakfast burritos are excellent for cooking over a camping stove or making ahead of time and freezing.  The recipe can easily be scaled up or down for the size of your camping crew.  The ingredients listed below will make about 15 burritos.
 
Ingredients:
1 lb. Spicy Pork Sausage
16 oz Package of Frozen Shredded Hash browns
½ Medium White Onion, diced
8 Large Eggs
¼ Cup Milk
8oz Shredded Cheese
1 Package Flour Tortillas (we used ‘fajita style’ with 20 to a package)
Salt and Pepper to taste
 
Optional:
Plastic wrap
Freezer bags
 
Cooking: 

Brown sausage in a large stove-top skillet or electric skillet.  Drain on paper towel.
 
Brown hash browns and onion in the same skillet.
 
While the hash browns and onion cook, whisk together 8 eggs, ¼ cup milk, and salt and pepper in a medium bowl.
 
Add browned sausage and egg mixture to cooked hash browns in the skillet.  Stir gently until eggs are fully cooked.
 
Make-ahead plan:
 
Place a portion of the fully cooked mixture on top of a tortilla, sprinkle with cheese, roll burrito, and wrap with plastic wrap.
 
Place multiple wrapped burritos within freezer bags for storage (we used quart size bags and could fit about 6 burritos per bag).
 
When ready to reheat burritos, remove burritos from plastic wrap, cover with a paper towel, and microwave for about 80 seconds (time may vary with your microwave).
 
Eat-immediately plan:
 
Warm tortillas according to package instructions.
 
Place a portion of the fully cooked mixture on top of a tortilla, sprinkle with cheese, roll burrito, and enjoy!

The second annual Yonah Mountain Campground Haunted House opened last weekend and it was so much fun!  It is bigger and better than last year with the addition of new ghouls and spooky special effects.  The fun isn't over yet - you have three more opportunities to tour the haunted house this year, Saturday October 13th, 20th, and 27th from 8:00 to 9:00 pm.

In addition to the haunted house, we're hosting trick-or-treating for young campers on Saturday the 20th. Bring your costumes for a 'trial run' before Halloween weekend :)
